Grilled Vegetable Salad

Ingredients

1 red bell pepper, cut into quarters
1 orange bell pepper, cut into quarters
1 green bell pepper, cut into quarters
1 Vidalia onion or red onion, cut into 6 slices
8 mushrooms, halved
5 ml Western Family extra virgin olive oil 1 tsp
30 mL Western Classics balsamic vinegar 2 tbsp
10 mL Western Family extra virgin olive oil 2 tsp
5 mL grainy mustard 1 tsp
5 mL Western Family liquid honey 1 tsp
1 small garlic clove, crushed

Preparation

Preheat the barbecue or broiler to medium high heat.

In a large bowl, toss the vegetables with 1 teaspoon of olive oil.

Place vegetables on a baking sheet to broil or directly on barbecue. Grill or broil until slightly blackened.

Whisk dressing ingredients together. Toss in the vegetables. Serve at room temperature.
