Strawberry, Mango and Cucumber Salad

Ingredients

75 mL rice wine vinegar 1/3 cup
45 mL Western Family olive oil 3 tbsp
13 mL granulated sugar 3/4 tbsp
8 mL fresh mint leaves, coarsely chopped 1-1/2 tsp
2 mL each salt and black pepper 1/4 tsp
500 mL strawberries, sliced 2 cups
1 medium English cucumber, cut into 1/4 inch cubes (about 4 cups)
1 large mango, peeled and cut into 1/4 inch cubes
2 L mixed torn greens 8 cups

Preparation

In a large bowl, place mixed torn greens. Top with berries, mango and cucumber.

In a small bowl, whisk together vinegar, oil, sugar, mint and salt and pepper. Just before serving, pour over salad and toss gently.

To make this salad a balanced main meal, top with grilled chicken almonds or chickpeas.
