Tomato and Red Onion Salad Platter

25 mL Western Family dijon mustard 1 1/2 tbsp
3 mL ground white pepper 1/2 tsp
45 mL red wine vinegar 3 tbsp
60 mL Western Family olive oil 1/4 cup
2 (1/2 oz./14 g) packages fresh basil
3 mL garlic 1/2 tsp
3 mL granulated sugar 1/2 tsp
4–6 large tomatoes
1 large red onion
1 100 g package chevre (goat cheese)
additional basil leaves (optional)
cracked black pepper to serve

Preparation

Combine the fi rst 8 ingredients in a bowl with a hand–held blender or in a food processor.

Slice the tomatoes. Thinly slice red onion and separate into rings.

Arrange tomatoes and onion in layers on a large serving platter. Salad and dressing can be covered and refrigerated separately for up to 3 to 4 hours.

Stir the crumbled cheese into the dressing and pour over the layers of tomato and onion. Decorate with additional basil leaves; sprinkle with cracked black pepper.
