Preparation
Combine sugar and water in a small heavy-bottomed saucepan. Bring to a boil: stir until sugar is dissolved. Be careful not to overcook or it will turn caramel colored. Remove from heat and cool
Drain peaches and reserve juice if using in place of cream. Puree peaches in a food processor or blender until smooth. Transfer to a bowl and stir in the thoroughly cooled sugar syrup.
Add table cream or juice from peaches, vanilla and seasonings; stir to blend.
Freeze in an ice cream maker according to manufacturer's instructions ot transfer into a metal pan.
Seal tightly; freeze until ice crystals form. Then whisk. Recover tightly and freeze until firm, about 3 hours.
When your favorite fresh fruits may not be in season (like peaches) know that frozen fruit or fruit packed in it's own juice is a worthy and nutritious alternative.
