Pesto for Pasta, Chicken or Fish

Ingredients

250 mL packed basil leaves 1 cup
250 mL packed basil leaves 1 cup
75 mL Western Family 1/ 3 cup
60 mL Western Classics 1/ 4 cup
4 garlic cloves
salt and pepper, to taste

Preparation

Combine all ingredients in a food processor or blender.

Process until well-combined and thick.

Refrigerate. Use for pizza, sandwiches, pasta or meat dishes.

Commercial pesto is, unfortunately, rather high in fat-although it is "good fat"(of vegetable origin and largely monounsaturated.) Remember, when making pesto all you need is enough oil to puree the basil leaves with the cheese and nuts.
