Peach and Hazelnut Wild Rice Salad

Ingredients

250 mL wild and brown rice blend 1 cup
30 mL Western Family extra virgin olive oil 2 tbsp
30 mL seasoned rice wine vinegar 2 tbsp
30 mL green onions, chopped 2 tbsp
finely grated peel of 1 orange
5 mL Western Family liquid honey 1 tsp
5 mL Western Family Dijon mustard 1 tsp
4 canned peach halves or 2 small, ripe fresh peaches, cut in halves
125 mL hazelnuts, toasted and coarsely chopped ½ cup
75 mL fresh cilantro, chopped 1⁄3 cup

Preparation

Cook rice as per package directions. Set aside. (Rice can be made in advance and refrigerated until using.

To make dressing, combine oil, vinegar, onions, orange peel, honey and mustard. Whisk to blend well.

Chop 2 peach halves and fold into dressing. Slice remaining peach halves and set aside.

Fold rice into dressing with half the nuts and cilantro.

Arrange remaining peach slices on top and sprinkle with the rest of the nuts and cilantro. Serve chilled.
