Preparation
In large bowl, combine lettuce, celery, onions and oranges. Set aside.
Make dressing: In a small bowl, whisk together all ingredients except nuts. Season to taste with pepper. Pour over salad and toss to coat
Sprinkle with candied almonds made by melting 15 mL (1 tbsp) white sugar over low heat. Add almonds and cook for 5 minutes until almonds are well coated and lightly browned. Cool on wax paper and break apart into small pieces
This salad is an excellent source of vitamin A and vitamin C.
