Ingredients

2 L romaine lettuces leaves, torn 8 cups
125 mL celery, thinly sliced ½ cup
2 green onions, chopped 2
1 284 mL/10 oz can, Western Family 1 mandarin oranges, drained
30 mL Western Family white vinegar 2 tbsp
20 mL Western Family extra virgin olive 4 tsp
15 mL chopped fresh parsley or 1 tsp (5 mL) dried 1 tbsp
10 mL white sugar 2 tsp
1 mL Western Family Louisiana hot sauce ¼ tsp
1 mL salt ¼ tsp
black pepper
60 mL candied almonds—see below ¼ cup

Preparation

In large bowl, combine lettuce, celery, onions and oranges. Set aside.

Make dressing: In a small bowl, whisk together all ingredients except nuts. Season to taste with pepper. Pour over salad and toss to coat

Sprinkle with candied almonds made by melting 15 mL (1 tbsp) white sugar over low heat. Add almonds and cook for 5 minutes until almonds are well coated and lightly browned. Cool on wax paper and break apart into small pieces

This salad is an excellent source of vitamin A and vitamin C.
