Preparation
Prepare beets and place in a large bowl. Tear leaf lettuce into bite-size pieces and add to large bowl.
In a small bowl, combine yogurt, honey, mustard, nutmeg, mint and orange peel and juice. Add salt and pepper to taste. Pour yogurt dressing over beets and lettuce. Mix well.
Arrange pear slices on top of salad. Serve immediately.
