Preparation
In a large bowl, toss cubed avocado with lime or lemon juice to prevent browning. Add oranges, mixed greens and red onions. Toss gently to combine.
To prepare dressing, combine all ingredients in a small bowl and whisk to blend. Set aside.
In a medium saucepan or wok, heat olive oil over medium heat. Add garlic and sauté for 1 to 2 minutes or until fragrant. Add prawns and cook stirring often for 2 to 3 minutes or until prawns turn pink. Remove from heat and set aside. Prawns can be refrigerated and chilled or served hot over salad.
Just before serving, toss salad with dressing. Top with sautéed prawns.
