Ingredients

14 small new red potatoes, scrubbed
45 mL fresh parsley, chopped, 3 tbsp
30 mL fresh dill, chopped, 2 tbsp
10 mL or dried dill, 2 tsp
90 mL green onions, chopped, 6 tbsp
60 mL red onion, finely chopped, 1/4 cup
1 red bell pepper, seeded and chopped, 1
75 mL red wine vinegar, 1/3 cup
175 mL Western Classics extra virgin olive, 3/4 cup
10 mL Western Family Dijon mustard, 2 tsp
1 clove garlic, crushed, 1
1 dash freshly ground black pepper, 1

Preparation

In a medium-sized saucepan, boil potatoes until just tender (about 20 minutes.)

Drain, cut in halves and let cool 5 minutes. Combine parsley, dill, green onions, red onion and red bell pepper with potatoes; mix gently.

In a small bowl, whisk together all dressing ingredients; vinegar, olive oil, mustard, garlic and pepper. Pour enough dressing over warm potato mixture to lightly coat; toss gently until all ingredients are coated with dressing.

Serve warm or refrigerate and serve chilled - this salad is delicious hot or cold!

This salad is the perfect accompaniment to a barbecued steak with a fresh cob of corn. When you don't have time to make it, try a fresh potato salad from our Deli department.
