Preparation
In a medium-sized saucepan, boil potatoes until just tender (about 20 minutes.)
Drain, cut in halves and let cool 5 minutes. Combine parsley, dill, green onions, red onion and red bell pepper with potatoes; mix gently.
In a small bowl, whisk together all dressing ingredients; vinegar, olive oil, mustard, garlic and pepper. Pour enough dressing over warm potato mixture to lightly coat; toss gently until all ingredients are coated with dressing.
Serve warm or refrigerate and serve chilled - this salad is delicious hot or cold!
This salad is the perfect accompaniment to a barbecued steak with a fresh cob of corn. When you don't have time to make it, try a fresh potato salad from our Deli department.
