Ingredients

1.75 kg Whole Chicken, 3.5 lbs
1 red apple, cored and chopped, 1
1 granny smith apple, cored and chopped, 1
8 mL marjoram ,1 ½ tsp
2.5 cm fresh ginger, grated or chopped, 1"
1 small onion, chopped, 1
5 mL black pepper,1 tsp
2 bay leaves, 2

Preparation

Preheat oven to 375° F (190° C).

Combine apples, marjoram, ginger, onion, and pepper in a bowl until well mixed.

Fill chicken cavity with the apple mixture. Alternatively, place apple mixture in a small baking dish.

Place 2 bay leaves under the skin, on top of each breast. Tie the bird for roasting.

Place chicken in a roasting pan and roast for 30 minutes. Reduce the heat to 350° F (180° C) and roast for another 70 to 80 minutes until meat thermometer reads 180° to 182° F (82° to 85° C) and juices run clear.

Remove from oven, place on a serving platter, cover with foil and let stand 10 minutes.

Create a one dish meal by adding sweet potato, carrot, onion and parsnip wedges to the roasting pan.
