Ingredients

75 mL Western Family liquid honey 1/ 3 cup
60 mL Western Family Dijon mustard 1/ 4 cup
12–15 mL curry powder 3/ 4 –1 Tbsp
60 mL Western Family butter, melted 1/ 4 cup
4 thick sole fillets
chopped fresh cilantro

Preparation

Preheat oven to 180°C (350°F).

Combine the first 4 ingredients in a small bowl; mix well.

Lightly butter or spray a shallow baking pan; add sole fillets, slightly overlapping, top side up.

Pour curry sauce over top; bake uncovered, about 15-20 minutes (depending on the thickness of the sole).

Serve at once on warm plates, topped with sprinkled cilantro.

This entrée is delicious served with rice or pilaf, baby carrots and a crisp green salad.
