Ingredients

L dark green lettuce like romaine or 4 cups mixed greens,
2-3 ripe tomatoes, diced
250 mL (1 cup) green peppers, diced
250 mL (1 cup) cheddar or mozzarella cheese, grated
250 mL (1 cup) celery, thinly sliced
500 mL (2 cups) Western Family frozen green peas
125 mL (½ cup) green onion, chopped
125 mL (½ cup) bacon, cooked and crumbled (optional)
250 mL (1 cup) Western Family light mayonnaise
250 mL (1 cup) Western Family fat-free sour cream

Preparation

Arrange lettuce as first layer in the bottom of the bowl. Cover with a layer of chopped tomatoes, then green peppers.

Top with a layer of grated cheese followed with a layer of sliced celery.

Follow with a layer of peas. Cooking the peas is not required.

Combine mayonnaise and sour cream. Spread over the layer of peas.

Sprinkle green onions and bacon, if using, as the final layer.

Refrigerate until serving. This salad can be made up to 1 day before.
