Preparation
Peel citrus fruit by cutting off both ends, setting the fruit on one of the cut ends and slicing down from the top to the bottom while rotating the fruit. Cut down between the segments and release each segment from the white membrane dividers.
Combine the salad ingredients (first four ingredients) in a large bowl and mix gently.
Whisk remaining ingredients for the together or process in a blender.
Pour dressing over salad and mix gently. Refrigerate until ready to serve.
When selecting citrus fruit, don't worry too much about any blemishes on the outside. You can choose the juiciest ones by choosing those that are heaviest.
