Ingredients

60 mL Jamaican rub spices* 1/4 cup
45 mL Western Family olive oil, enough to make a thin paste 3 tbsp
4 Maple Leaf Prime™ chicken breast, skinless, boneless
250 mL cantaloupe, diced 1 cup
250 mL honeydew, diced 1 cup
250 mL seedless watermelon, diced 1 cup
60 mL red onion, finely diced 1/4 cup
60 mL fresh cilantro, finely chopped 1/4 cup
juice of 1 lemon
salt and pepper to taste

Preparation

Preheat oven to 400ºF (200ºC).

In a small dish, mix together rub spices and olive oil. Rub chicken breasts on both sides with the spice paste and transfer to a baking dish.

Roast about 30 to 40 minutes or until juices run clear. Alternatively, preheat barbecue to medium-high heat and cook for 5 to 7 minutes per side or until juices run clear.

Meanwhile, combine all the salsa ingredients and chill in the refrigerator until ready to serve with the hot chicken.

Chicken provides lean, quality protein and is a moderate source of iron. When foods containing iron are combined with sources of vitamin C, like the melons and lemon juice in this recipe, the absorption of iron in the body is enhanced.
