Ingredients

250 mL fresh blueberries 1 cup
1 fresh peach, diced large (or canned)
30 mL red onion, diced 2 tbsp
5 mL Western Family honey 1 tsp
1 juice of 1 lime
30 mL fresh cilantro, chopped 2 tbsp
4 boneless, skinless chicken breast halves
15 mL Western Family olive oil 1 tbsp
salt and pepper to taste

Preparation

To make salsa, gently toss together blueberries, peach, onion, honey, lime juice and cilantro. Cover and set aside at room temperature.

Brush chicken with olive oil and season with salt and pepper. Grill, bake, broil or barbecue and serve with the salsa.
